The story
The Loyalist brings a disciplined approach to French bistro cooking in Chicago. John Shields leads the kitchen, applying techniques honed at his three-Michelin-starred sibling restaurant, Smyth, located directly above. Executive Pastry Chef Karen Shields and Head Chef Brian Francis support a menu rooted in technique and seasonal produce. The kitchen’s dedication to responsible sourcing was recently recognized with two radishes in the We’re Smart Green Guide.
The dinner menu balances classic preparations with precise execution. Guests can order Kanpachi Crudo dressed with baby fennel and rhubarb, or dive into the rich flavors of the Venison and Fig Pâté Maison. Heavier favorites include the Potato Gnudi with brown butter and Parmigiano Reggiano, alongside the crisp-skinned Trout à la Grenobloise. Sunday brunch shifts focus to comforting staples like the Quiche Lorraine featuring black truffle and Benton’s bacon.
Located on the garden level at 177 North Ada Street, the dining space feels intentionally cozy and unpretentious. Large windows open onto a seasonal patio where guests enjoy cocktails under the open sky. The layout encourages lingering over shared French bistro plates like the Gougères with Mimolette cheese or the Anchovy Toast dressed with yuzu. Evening service runs smoothly from five until ten, creating a steady rhythm for locals and visitors alike.
Lead Bartender Chris Martin crafts seasonal house cocktails such as the Peat in Paradise, which pairs Ardberg whisky with mango ice cream. The wine list highlights natural selections like a vibrant Crémant du Jura and a structured bottle of Champagne. Desserts close the meal with refined simplicity, including a warm Chocolate Chip Cookie baked with cocoa nibs and a bright Tarte au Citron.
