The story
At Tia Carmen, located within the JW Marriott Phoenix Desert Ridge Resort + Spa, celebrity chef Angelo Sosa brings a deeply personal vision to the table. The restaurant, which opened in 2022, is named for his Aunt Carmen and celebrates the farmers, landscapes, and communities of the Southwest. The cuisine is firmly rooted in Southwestern American traditions, with a focus on wood-fired grilling, heirloom ingredients, and bold flavors.
Chef Sosa’s path to Phoenix is an international one. A protégé of Jean-Georges Vongerichten, he has worked in three-star Michelin kitchens in Europe, trained with Alain Ducasse, and cooked alongside Masahiro Morimoto. Fans may recognize him from three seasons on Top Chef or his appearances on Selena + Chef. He has also written two cookbooks, including Healthy Latin Eating, which draws on his Dominican heritage. At Tia Carmen, his approach fuses those global techniques with the ingredients and traditions of the Arizona desert.
The menu is built around the wood-fired grill and changes throughout the day, serving breakfast, lunch, and dinner. Dishes like the ember roasted purple yam with aged tepary bean mole negro and the mesquite chicken tinga with charred pineapple reflect the kitchen’s commitment to local farms and Native heirloom crops. The restaurant partners with Ramona Farms, Hypha Arizona Mushrooms, and Arizona Grass Fed Beef, among others. A full tasting menu and a vegetarian tasting menu are also available.
The beverage program is equally considered. Cocktail director Mitchel O. Bushell uses local herbs, spices, and Arizona spirits, while wine director Eduardo Dingler, formerly of Morimoto Restaurant Group, has curated a list that highlights Mexico’s Valle de Guadalupe alongside West Coast and emerging European producers. This attention to detail earned Tia Carmen a 2025 Wine Spectator Award of Excellence.
