The story
On South Pearl Street, where Chef Toshi Kizaki first introduced Japanese cuisine to Denver in 1984, he has returned to his roots. Kizaki is his highly anticipated omakase concept, a deeply personal project that pays respect to the edomae tradition—a 200-year-old Tokyo-style sushi philosophy that honors the integrity of each ingredient through authentic Japanese techniques.
Chef Toshi Kizaki is a foundational figure in Denver’s restaurant culture. Alongside his brother Yasu, he opened Sushi Den in 1984, becoming one of the first chefs in the U.S. to import fresh fish directly from Japan’s Nagahama Fish Market. Now, 40 years later, his influence is undeniable, and Kizaki represents the peak of his remarkable career. The restaurant earned a Michelin star for its high-quality cooking, a recognition of the discipline and artistry on display.
The omakase menu unfolds through approximately 20 courses, showcasing fish prepared using a range of techniques—raw, cured, seared, and dry-aged. The same meticulous care extends to every ingredient. Rice is sourced from Japan’s famed Niigata Prefecture, and Kizaki elevates his shari with a variety of vinegars, creating layers of complexity and subtle color variations that enhance the natural flavors of each fish.
At the helm alongside Chef Toshi is Chef Taro, a master whose journey began in 1996 at a historic sushi restaurant founded in 1924. His deep foundation in Edomae technique, precision, and disciplined hospitality earned him national recognition, including a Gold Award at the 21st Sushi Technology Competition. From 2007 to 2011, he served as the official chef at the Consulate General of Japan in Los Angeles, receiving a commendation from the Minister of Foreign Affairs. A certified Sagetsu-ryu Ikebana Shihan, his artistic philosophy influences his refined presentation. After working at Sushi Takumi in Hawaii and joining Sushi Den in 2021, Chef Taro opened Kizaki in 2025, where his lifelong dedication to craftsmanship was honored with the Michelin star.
