The story
Safta brings the culinary landscape of Israel to Denver. The menu, rooted in the traditions of the Middle East, Europe, and North Africa, is a reflection of the crossroads where food and culture meet. Wood-fired pita, baked just steps from the table, soaks up the flavours that span from Israel to Bulgaria, Yemen, Morocco, and Greece.
Executive Chef David Cleary leads a kitchen that turns out a vibrant array of salatim, hummus, small plates, and larger entrees. The hummus selection includes versions with lamb ragu, foraged mushrooms, and a soft-cooked egg with harissa. Salatim like labneh with pink peppercorns, muhammara, and babaganoush are designed to be shared. Larger plates include harissa roasted half chicken, New York strip with black garlic harissa, and duck confit tagine. A brunch buffet on weekends offers an extensive spread of Israeli classics.
Safta’s approach to Middle Eastern cuisine has earned it a Michelin Recommended distinction, a sign of its consistent quality and thoughtful cooking. The restaurant is located within The Source Hotel, offering a setting that is both relaxed and refined.
Safta is part of Alon Shaya’s Pomegranate Hospitality. The team is led by General Manager Trace McGinley and Executive Chef David Cleary, who oversee the day-to-day operation. The restaurant also offers catering, semi-private dining, and event services.
