The restaurant takes its name from Marigold de la Rosa, a 19th-century free spirit who cultivated the land around what is now LoHi, blending the culinary traditions of her Mexican mother and Italian father. That heritage of exploration and connection to the land lives on in every plate.
Chef Aiden Tibbetts leads the kitchen with an ingredient-driven approach that marries Denver's Italian and Mexican roots with Colorado's contemporary food culture.
