The story
Semo Pasta + Wine describes itself as a neighborhood pasta and wine bar in downtown Fremont, Nebraska. The focus is on handmade pasta, a thoughtfully chosen wine list, and warm hospitality in a cozy, elevated atmosphere.
The kitchen is guided by four principles: ingredient, execution, innovation, and seasonality. Chefs work closely with farmers from Nebraska and Iowa to build the menu. The restaurant’s commitment to sourcing is evident in the list of partner farms displayed on its website, including producers of beef, produce, and honey.
The wine program is a standout. With an award-winning list of over 175 selections, Semo emphasizes small producers, many of whom are committed to making natural wine with spontaneous fermentation and minimal intervention. This dedication earned the restaurant a Wine Spectator Award of Excellence in 2025.
Semo’s approach is straightforward: the best meals bring people together. The team aims to make guests feel well taken care of from the moment they walk through the door, whether stopping in for a glass of wine or settling in over a plate of pasta. The restaurant also offers a retail component, with select Semo pastas available at local grocers, made the same way as in-house.
Beyond the dinner service, the team hosts regular events, including wine dinners and chef collaborations. Chef Drew Statz, who leads the kitchen, has participated in events like the Battle of the Chefs at Longwalk Farm, facing off against other notable chefs. The restaurant also serves brunch and offers a dedicated dessert menu.
As a European-style pasta and wine bar, Semo brings a refined yet approachable dining experience to Fremont. Reservations are strongly encouraged. The restaurant is open Wednesday through Sunday from 5pm to 9pm, and also participates in the Downtown Fremont Farmers Market, selling fresh pasta and other goods.
