At Cyrus in Geyserville, just outside Healdsburg, Chef Douglas Keane has reinvented the fine-dining format. Rather than a single table for three hours, guests move through four distinct spaces. The evening begins in the Bubbles Lounge, where a Champagne and Martini cart welcomes you alongside small bites from the kitchen. From leather chairs or the garden terrace, you take in vineyard views before the meal continues.
Next comes the Kitchen Table, a U-shaped counter where Chef Keane personally presents seven courses. Here, the kitchen’s choreography becomes theatre: diners watch chefs prepare dishes like billi bi — a fennel-forward mussel soup with a foamy intensity — or Kusshi oysters basted with soy-infused butter over a Japanese charcoal grill. The open kitchen offers a multiplane view of the action, inviting guests to wander and observe.
The main dining room, with sweeping views of Alexander Valley, serves seven more courses. Standouts include a seared sea scallop and grilled matsutake with chrysanthemum, reflecting Keane’s time at Kyoto’s Japanese Culinary Academy. The meal closes in the mysterious Chocolate Room, where a parting gift of house-made chocolate awaits. This 20-course journey, recognized with a Michelin star for 2026, reimagines Modern Cuisine as a fluid, intimate experience — part exploration, part celebration.
