The restaurant, a collaboration between Michelin-starred Chef Alain Verzeroli and The Bastion Collection, earned its Michelin star at Texas’s inaugural Michelin Guide ceremony in 2024. Chef Alain Verzeroli, a longtime protégé of Joël Robuchon, spent 18 years immersed in Japanese culture. Mains range from Spanish rabbit tortellini in Parmesan-chicken consommé to olive oil poached cod with artichokes. The “Flavors of French Tradition” section honors classics like steak tartare and filet de boeuf au poivre. For two, the squab pithivier with foie gras and mushroom duxelles is a standout.

The Seasonal Expression menu, a five-course tasting, offers a deeper exploration of the season’s bounty—think poached salmon mi-cuit with caviar, spring pea custard with morel fricassée, and roasted lamb chop with coco beans. Desserts, like the Valrhona dark chocolate crémeux or the delicate “Butterfly” yuzu mousse, are crafted by Pastry Chef Gkaris.

Culinary Director Alain Verzeroli oversees the kitchen, but the day-to-day is in the hands of Executive Chef Felipe Botero and Executive Sous Chef Mariana Figueira. The beverage program is led by General Manager Thurston Woods and a team of experts. The Bastion Collection, which operates Le Jardinier in Miami, New York, and Geneva as well, brings a global perspective rooted in Michelin-level hospitality.
