The story
Fogo de Chão’s story begins in the mountainous countryside of Rio Grande do Sul, Brazil, where the founding brothers grew up on a traditional farm. There they learned the art of churrasco – the slow, fire-roasting of meats over open flames. After formal training in Rio and São Paulo, they opened their first restaurant in Porto Alegre, built from wood and rooted in family heritage. Word spread among politicians, businessmen, and celebrities, leading to a second location in São Paulo and, eventually, a stateside debut in Dallas. Today, the King of Prussia outpost carries that same dedication to quality and respect for tradition.
At the heart of the meal is the continuous service of fire-roasted cuts – from Picanha (prime top sirloin) to Fraldinha (bottom sirloin) and Wagyu options. The experience begins with the seasonal Market Table, a spread of fresh salads, vegetables, and imported cheeses. Authentic Brazilian sides – like polenta, mashed potatoes, and caramelized bananas – accompany the meats. For a limited time, the Fogo Four Course offers a selection of popular cuts, Market Table, sides, and a decadent dessert for $59. Bar Fogo adds Brazilian-inspired small plates, craft cocktails, and a curated wine list.
Fogo de Chão holds a Wine Spectator Award of Excellence, a nod to its well-chosen wine program. The restaurant’s Founders Tribute Wine Collection features four labels from Argentina, Chile, and California, each paired with specific cuts. Special events like the VIK Wine Dinner – a chef-curated evening pairing South American wines with dishes such as Wagyu New York Strip and Beef Ancho Bone-in Ribeye – showcase the depth of the wine list. The 2021 VIK Red Blend, a 100-point wine, is a highlight of these dinners.
