The story
Prime Barbecue in Knightdale, North Carolina, isn’t trying to fit into a regional box. As the team puts it, “What style of barbecue do we serve? Our own.” This approach—rooted in the best of all great BBQ traditions—has earned the restaurant a Michelin Bib Gourmand award, a nod to its good quality, good value cooking.
The philosophy is straightforward: source the best ingredients, season them with careful spice blends, and smoke them low and slow with 100% hardwood. The result is a harmony of smoke, flavor, and tenderness that speaks for itself. Champion pitmaster Christopher Prieto leads the kitchen, bringing years of experience from the professional barbecue circuit and a lifelong quest to find the “soul” of barbecue. His signature style is what he calls “barbecue excellence.”
The menu at Prime Barbecue is built around smoked meats sold by the half-pound—brisket, pork ribs, house-made sausage, pulled pork, and turkey breast. Meat plates let you choose one, two, or three meats with two sides, from Big Boss Beans and mac ’n’ cheese to sweet potato salad and barbecue rice. Sandwiches range from sliced brisket to the towering Full Nelson, piled with beef rib, sausage, pulled pork, slaw, and pickled onion.
Weekly features keep things interesting: Tuesday brings a Prime Cuban and pastrami, Wednesday offers burnt ends and Frito pie, and Friday is for beef ribs and burnt ends. Saturday features whole hog lechon. Sides and sweets round out the experience, including Texas cobbler with Blue Bell ice cream and seasonal Blue Ribbon Dream desserts.
Open Tuesday through Saturday from 11:00 until sold out, Prime Barbecue is a gathering spot for Knightdale. The tagline “Bringing people together over great food” is more than words—it’s visible in the steady stream of locals and visitors alike. Whether you pre-order to skip the line, host an event, or just walk in, the focus remains on that perfect marriage of passion and process.
