The story
Gwen Butcher Shop & Restaurant is the second restaurant from fine dining chef Curtis Stone, who partnered with his brother, Luke Stone, for this venture. A decade-long dream, the restaurant is named after their maternal grandmother, who lived on a farm outside of Melbourne. It was on her farm where the brothers were first exposed to livestock farming, instilling in them a deep respect for the process of raising animals for food. Both started their careers in a butcher shop before Curtis went on to cook in Michelin-starred restaurants.
Gwen is both an old-world, European-style butcher shop and an elegant restaurant that is redefining fine dining in Los Angeles. The restaurant serves an à la carte menu built on fire-based cooking techniques, a natural expression of the steakhouse cuisine that defines the experience. A stone’s throw from iconic Hollywood venues, a pre-theatre menu is also available for guests looking for a quick bite before a night on the town.

Gwen works directly with ranchers and purveyors to source animals, using only hormone-free, ethically raised meat. They find and make the best-tasting meats available, whether sourced from California or Blackmore wagyu beef from Australia.
True butchery has become a lost art, and Gwen’s chef-minded craft butchers practice old-world methods with modern ideals, using the whole animal. Complementing the meat offerings is an in-house charcuterie program, where the team produces terrines, pates, confits, salamis, and whole cured muscles like coppa and culatelo. The staff guides customers through the entire cooking process, from finding the right cut to serving it as a meal.
