The story
At Cultura, the team honors the profound culture of Oaxaca, Mexico—a tradition that runs deep in Monterey County. Everything on the menu is made from scratch, using fresh local ingredients sourced from small, family-owned businesses. The result is food that feels both rooted and personal, earning the restaurant a Michelin Recommended distinction.
Chef Michelle Estigoy leads the kitchen, turning out dishes that range from simple snacks to complex moles. Start with house-made chips and all three salsas—roasted tomato, tomatillo verde, and guacamole—or try the chapulines, toasted grasshoppers seasoned with chile. The antojitos section features a butter lettuce salad with creamy jalapeño dressing, local rock cod ceviche, and memelitas with aciento, black bean purée, and quesillo.
Tacos are served a la carte on house-made masa tortillas, with fillings like chicken tinga, beef barbacoa, and a vegan mushroom option. For a bigger meal, the Cultura Chicken Mole pairs half a roasted Mary’s chicken with sesame, orange, and saffron tortillas. The Mushroom Pipian Mole is a vegan standout, packed with shiitake, maitake, oyster, and lion’s mane mushrooms. Other specialties include a goat cheese chile relleno with pasilla mole, and smoked short rib with guajillo and crispy potato.
Beyond the food, Cultura boasts a dedicated mezcal library. The cocktail list is equally thoughtful, with house margaritas—classic, cadillac, and mezcal—alongside seasonal creations like the Letters to Oaxaca (mezcal, sparkling rosé, honey) and the ApotheCURA with absinthe spritz. Happy Hour runs Tuesday through Sunday from 4:00 to 5:30 pm.
Sarah Kabat-Marcy and Chef Michelle Estigoy together bring this vision to life, ensuring every detail—from the hand-pressed tortillas to the ethically sourced ingredients—reflects the culture they celebrate. With outdoor seating, a private room, and wheelchair access, Cultura welcomes guests to experience Oaxaca in the heart of Carmel-by-the-Sea.
