The story
Dakar NOLA is a modern Senegalese tasting menu restaurant that draws its name and soul from two coastal cities: Dakar, Senegal, and New Orleans, Louisiana. Chef Serigne Mbaye’s seven-course menu highlights seafood from local waters and produce from South Louisiana farmers, weaving together the culinary traditions of his childhood in Senegal with techniques honed in some of the world’s finest kitchens.
Born in Harlem and raised in Dakar, Chef Serigne learned to cook at his mother’s knee. He later trained at Commander’s Palace, Atelier Crenn, and Atelier Joel Robuchon before finding his voice in New Orleans, where the echoes of Senegalese food traditions still resonate in the city’s Creole pots. In 2021 he was named Eater NOLA Chef of the Year, and he received James Beard Award nominations in both 2022 and 2023. The restaurant earned a Michelin Recommended distinction in 2026.
Dinners at Dakar NOLA feature multiple courses, some served family style in homage to West African dining traditions. The seasonal, pescatarian menu changes often but follows a familiar arc: a welcome tea, a bread course, a bounty of the Gulf shrimp course, a farmers’ market salad, Louisiana rice, a fish course, and dessert. Most items are dairy- and gluten-free. The restaurant’s motto—“We cook to nurture the soul”—is worn on the back of every cook’s shirt.
Chef Serigne Mbaye leads the kitchen alongside Dr. Afua “Effie” Richardson, a board-certified pediatric dentist who serves as Managing Director and co-owner, overseeing front-of-house operations. The team also includes Pastry Chef Shardé Cole, General Manager Keenan Goldsmith, and Sommelier Imani Pittman.
Dakar NOLA’s tasting menu is an exploration of what modern Senegalese cuisine can be—grounded in tradition, refined by technique, and rooted in the ingredients of the Gulf South.
