At Saba, the flagship restaurant of Pomegranate Hospitality in Uptown New Orleans, the name itself—Hebrew for Grandfather—hints at the warmth and storytelling at the heart of the experience. Chef Alon Shaya’s vision is a deeply personal one: a journey through food and drink that pays homage to the culinary landscape of Israel, drawing on influences from the Middle East, Europe, and North Africa.
The menu reflects a collection of moments where food and culture have crossed paths, offering a taste of an ever-evolving cuisine. Wood-fired pita bread, baked steps from the table, is the centerpiece—a warm, charred vessel ready to soak up flavors from Bulgaria, Yemen, Syria, Morocco, Turkey, and Greece. Saba sources seafood, meats, and produce from local farms around New Orleans, guiding them over hot coals to create family-style platters that are meant to be shared.
