The story
On Magazine Street, Saffron NOLA is the realized vision of the Vilkhu family—a restaurant that illustrates the evolution of Indian cuisine in the American South. Founded by Arvinder and Pardeep Vilkhu, who immigrated from India to New Orleans in 1984, Saffron is the culmination of 26 years in catering and six years as a pop-up. Now in its seventh year, the restaurant has earned a Michelin Recommended distinction, alongside James Beard Award nominations for Best New Restaurant (2018) and Best Chef: South (2024, 2025).
The menu is Indian at its core, but Chef Arvinder Vilkhu and Co-Executive Chef Ashwin Vilkhu infuse it with global influences and Louisiana’s rich culinary traditions. Gulf seafood and locally sourced ingredients are treated with Indian techniques and bold spices, resulting in dishes that feel both deeply rooted and refreshingly new. The approach extends beyond the plate: Bar Manager Colin Williams weaves Indian spices into inventive cocktails, while General Manager Taylor Adams curates a harmonious wine program.
