Chef Cosme’s path to this kitchen began in his hometown of Chiapas, Mexico’s southernmost state, where he learned to cook from his mother, sister, and aunts. After moving to the United States in 1998, he spent a decade immersed in French cuisine, working in kitchens and honing his skills. That classical training, paired with the flavors of his childhood, defines the cooking at Casa Enrique. The result is Mexican food that feels both refined and deeply personal.
