The story
Laser Wolf is a shipudiya—a skewer house—and a pillar of Israeli dining, perched on the roof of The Hoxton in Williamsburg, Brooklyn. Its name comes from the butcher in Fiddler on the Roof, a fitting nod for a place where charcoal grills are the heart of the kitchen. From this rooftop, diners look out over the East River at the Manhattan skyline, an uninterrupted backdrop that shifts from golden afternoon light to glittering evening towers.
Laser Wolf Brooklyn is the first collaboration between Philadelphia’s CookNSolo (led by Chef Michael Solomonov and Restaurateur Steven Cook) and Chicago’s Boka Restaurant Group. The menu is driven by Executive Chef Andrew Henshaw, who spent five years as Chef de Cuisine at Zahav, and Chef de Cuisine Mike Mayo. Together they tend the live coals, an ancient cooking style that intensifies every ingredient.
Dinner begins with signature hummus, warm pita, and a colorful array of vegetable salatim—endless small plates that change with the season. Then come meat and vegetable skewers cooked over the charcoal grill. The meal closes with a brown sugar soft-serve ice cream that has become its own draw. The cocktail program is equally serious, with vibrant drinks made to match the rooftop energy.
