The story
Since 1979, Fogo de Chão has kept the flames of the culinary art of churrasco burning. The founders grew up on a traditional farm in the Serra Gaucha region of Southern Brazil, where they learned the craft of fire-roasting meats over open flames. That heritage is alive at the Portland location, where gaucho chefs—churrasqueiros—carve a continuous parade of fire-roasted cuts tableside.
The menu centers on the full Churrasco Experience: a sequence of premium beef, lamb, pork, and chicken, all slow-roasted over wood embers. Alongside the meats, guests help themselves to the Fresh & Vibrant Market Table, a seasonal spread of salads, vegetables, and imported cheeses. Bar Fogo offers Brazilian-inspired small plates and cocktails, making the space work for everything from a quick lunch to a long dinner with friends.
The Portland location earned a Wine Spectator Award of Excellence in 2016, a recognition of its thoughtfully curated wine list. The selection includes South American reds that pair naturally with the robust flavors of churrasco, as well as the restaurant’s own Founders Tribute Wine Collection—bottles like the Jorjão Malbec from Mendoza and the O’Leão Red Blend from Chile, each chosen to complement specific cuts.
