The story
Fogo de Chão brings the renowned culinary art of churrasco to Roseville, California. The tradition began in the mountainous landscapes of Rio Grande do Sul, Brazil, where the founders grew up on a farm learning the centuries-old technique of fire-roasting meats. After formal training and years of developing the concept, the first restaurant opened in Porto Alegre. The Roseville location continues this legacy, offering diners the full Churrasco Experience.
Gaucho chefs move through the dining room with skewers of fire-roasted cuts, carving Picanha, Fraldinha, and Filet Mignon tableside. The experience extends beyond the protein. Guests build their own plates from the seasonal Market Table, a fresh and vibrant spread of salads, vegetables, and imported cheeses. Bar Fogo offers Brazilian-inspired small plates and a curated selection of cocktails and wines.
The restaurant's wine program has earned a Wine Spectator Award of Excellence for 2025, a testament to the care taken in building a list that complements the bold flavors of churrasco. The Founders Tribute Wine Collection features four reds crafted to pair with specific cuts: a Malbec for the signature Picanha, a Red Blend for the Lamb Picanha, and a Cabernet Sauvignon for the Filet Mignon.
