The story
In San Francisco's Mission District, Donaji brings the wild heart of Oaxaca to life. The name comes from the Zapotec language, meaning "great soul," inspired by a legendary Zapotec princess. Opened in October 2021, the restaurant has been on the Michelin Guide since its opening, a testament to its immediate impact on the city's dining scene.
Owner and Chef Isai Cuevas, a native of Zimatlan, Oaxaca, moved to San Francisco in 2004. His path started as a dishwasher and led through kitchens across the city, including a sous chef role under Chef Jan Birnbaum at Epic Steak and executive chef at Liverpool Lil's. Before opening Donaji, he launched Tamalitos, making tamales from organic masa harina for farmers markets and catering. That commitment to quality ingredients and ancestral techniques is now the foundation of the restaurant.
The food honors origin: heirloom corn, wild herbs, and recipes passed down through generations. The atmosphere is upbeat and welcoming — the kind of place where you bring friends, order drinks, and stay a while. The restaurant also features art by Isai’s cousin, Vladimir Cuevas.
Alongside the Mexican cuisine, Donaji operates as a dedicated mezcal bar. The selection of mezcals and eclectic Mexican spirits is designed to be explored sip by sip. The restaurant is located on 24th Street in the Latino District of San Francisco, and welcomes walk-ins, saving most of its space for spontaneous visits.
