The story

Yuji San Francisco | Kappo Japanese Dining at Chef's Counter

Yuji

At Kappo Yuji in San Francisco, the ancient Japanese art of kappo takes center stage. Kappo, or kappo ryouri, translates to "cutting and cooking," and here it means a deep respect for seasonal ingredients, prepared with precision and served directly from the chef. This is not a place for a quick meal; it is an experience built around the rhythm of the kitchen and the changing calendar of the sea and soil.

The restaurant is reservation-only, offering a single seating at a nine-seat chef's counter. Each evening, guests are treated to a set menu that highlights the day's finest seafood. A signature example is the chawan mushi—a delicate Japanese egg custard topped with uni, ikura, and crab. The focus is consistently on fish, so the kitchen does not offer vegetarian or vegan alternatives. The per-person price is $168 for a two-hour dining experience.

Kappo Yuji has earned a Michelin Recommended distinction, a recognition that aligns with its disciplined, ingredient-driven approach. The atmosphere is one of quiet focus, where the chef's work is as much a part of the meal as the food itself. Smart casual attire is requested, and guests are asked to avoid strong perfumes and to refrain from using phones during dinner, preserving the intimate, counter-side connection between chef and diner.
