Since opening its doors on Market Street in 1979, Zuni Café has become a defining presence in San Francisco’s dining landscape. Its enduring popularity is rooted in a commitment to honest, seasonal cooking that blends Californian and French traditions. The restaurant’s reputation has been recognized with a Michelin Recommended distinction, as well as James Beard Foundation Awards for Outstanding Restaurant (2003) and Outstanding Service (2018).

Origins and Evolution

Founder Billy West started Zuni with ten thousand dollars and a huge heart in a single narrow storefront. The original menu, inspired by the cookbooks of Diana Kennedy and Elizabeth David, was limited by a tiny kitchen—essentially a toaster oven and a kettle grill in the alley. Yet the café was an instant success, soon expanding into the adjacent corner space previously home to a cactus shop.

In 1987, chef Judy Rodgers joined as partner, bringing her deep experience from the Troisgros family kitchen in Roanne, from Chez Panisse, and from travels across Italy. She insisted on a wood-fired brick oven, which became the heart of the kitchen, perfuming roast chickens, whole fish, vegetable gratins, and squabs with wood smoke. Under Rodgers, the menu evolved into what she called “an evolving hybrid of the cuisines that I love”—a Californian-French approach that introduced now-classic dishes such as ricotta gnocchi, home-cured anchovies with celery and Parmesan, and espresso granita.

The Experience Today

The daily changing menus at Zuni reflect the best of seasonal organic ingredients, with nearly all produce, meat, and fish sourced sustainably. While French and Italian influences remain central, the cooking is unmistakably Californian in its brightness and respect for the raw product. The restaurant continues to nurture a convivial, intimate atmosphere—rustic yet cosmopolitan, audacious yet familiar.

In 2006, Gilbert Pilgram, a longtime friend and former Chez Panisse chef, joined as co-owner and executive chef. He has upheld Rodgers’ perfectionism and vision, ensuring that Zuni Café remains both a neighborhood staple and a destination for anyone seeking soulful, wood-fired cooking in San Francisco. Whether for a Sunday brunch or a late dinner, a meal here feels like a return to the very best of what dining out can be.
