Inspired by the diverse regions of Spain, Vaca brings the vibrant flavors of Barcelona, Andalucía, and the Basque Country to two California locations. The menu spans traditional tapas to modern interpretations of premium meats, all crafted with a deep respect for authentic Spanish cooking and the creative twist of award-winning Chef Amar Santana.
Chef Santana is a rising star who is transforming the OC culinary scene into a food destination. Alongside partners Ahmed Labbate and investor Pam Roy, he has created an atmosphere where the food and drink transport you to Spain. The beverage program highlights classic Spanish cocktails, wine, and beer alongside an innovative selection of craft drinks.
The original Costa Mesa space is situated between the Segerstrom Center for the Arts and South Coast Plaza on Town Center Drive. It evokes the energy and ambiance of Spain with the comfort of California, offering indoor and outdoor dining, counter seating, and a private room. A second location has opened in Downtown Los Angeles, beneath The Beaudry, directly across from the Intercontinental Hotel and blocks from cultural landmarks like The Broad and Walt Disney Concert Hall.
