At Selva Grill, Latin Fusion cuisine is more than a label — it is the deliberate marriage of bold flavors from Latin America and the United States, with a special emphasis on Peruvian dishes. The kitchen acknowledges the influence of Asian immigrants on Peru’s culinary history, fusing techniques and ingredients into something distinctly its own.

The restaurant operates two Sarasota locations: the original downtown outpost on Main Street and a newer spot in University Town Center. Both serve the same intricately prepared, artfully plated dishes that have earned national attention. The New York Times called Selva “serving possibly the best food in Sarasota,” adding that “everything on the menu is worth trying.”

Ceviches are a cornerstone here — the Wahoo Ceviche pairs fresh Hawaiian wahoo with cucumber, jalapeño, lime, and watermelon, while the Selva Wild Ceviche uses seasonal white fish with lime, onion, cilantro, and garnishes of Cusco corn and roasted sweet potato. Beyond ceviches, the menu ranges from frutas del mar to duck, lamb, and steaks finished with exotic salsas and herbs.

The bar and lounge offer a separate energy — custom cocktails, a late-night menu, and cushy seating. On Friday and Saturday nights, DJs spin until close. The wine program, recognized with a Wine Spectator Award of Excellence in 2025, features selections from around the world.
