Shaker and Spear, the signature restaurant at the Kimpton Palladian Hotel in Seattle’s Belltown corridor, is an intimate 65-seat room where the focus is firmly on the coast. The kitchen, led by Chef Joseph Haffly, practices a philosophy of clarity: the best ingredients from local waters and regional farms are prepared with restraint, letting the flavors of the Pacific Northwest speak for themselves. This approach has earned the restaurant recognition with a Wine Spectator Award of Excellence.
Every menu change at Shaker and Spear starts with what is coming out of the sea and arriving from the farms. The summer menu, built on this foundation, features oysters, crudo, and seafood-driven plates that favor clarity over complexity. The result is a point of view that is distinctly Pacific Northwestern, where sourcing is intentional and the ingredients lead.
Chef Joseph Haffly, a Culinary Institute of America graduate, is known for his disciplined execution and deep commitment to ingredient integrity. He previously led the culinary program at Restaurant Lola and served as Executive Chef at Seabird, where the restaurant earned national recognition from Bon Appétit and Esquire. At Shaker and Spear, he brings the same meticulous approach, ensuring every dish reflects the season and the region.
The beverage program is equally thoughtful. Food & Beverage Director Jeff Lindsay-Thorsen, an Advanced Sommelier and Wine Enthusiast “40 Under 40 Tastemaker,” has crafted a wine list that is curated, food-driven, and approachable. The selections are chosen to complement the seafood and carry the meal forward, from a single glass at lunch to a bottle that anchors dinner. The cocktails, grounded in classic form, are precise and designed to work as well before a meal as alongside it.

The Chef's Counter, with just five seats, offers an up-close view of the kitchen in action, providing direct access to Chef Haffly and the ingredients that define the restaurant's point of view.
