The story
Kōsen, which translates to "ray of light," brings a refined Japanese omakase experience to Tampa's vibrant Tampa Heights district. At a 12-seat chef's counter, guests immerse themselves in a 20+ course tasting menu that Executive Chef Andrew Huang crafts with a philosophy of blending tradition and innovation.
Chef Huang, a seasoned sushi chef with 23 years in the industry, brings experience from Japan and his role as Head Chef at Uchiko in Houston and Miami. His culinary background, rooted in both Japanese and Taiwanese cooking, shapes the menu's precise, seasonal expression. A sample spring menu reveals a progression that moves from a Noresore with orange ponzu and uni, through Wagyu with snap peas and poultry jus, to a series of nigiri including Hotate, Aori Ika, and Kinmedai, before closing with desserts like Black Sesame with blueberry and black garlic.
The restaurant's commitment extends beyond the plate. Kōsen has earned a Michelin One Star, a recognition of its high-quality cooking, and has paired this with a comprehensive sustainability initiative. An in-house fermentation program repurposes ingredients into syrups, vinegars, and misos, while partnerships with local regenerative farmers ensure responsibly sourced produce. Single-use plastics have been eliminated.
Adjacent to the chef's counter is Tantō, an intimate Japanese-inspired cocktail lounge led by Beverage & Sustainability Director Mike Western. The space offers a study in precision and restraint, where cocktails, Japanese spirits, and seasonal ingredients meet. Walk-ins are welcome.
