The story
Chang Chang, a few blocks south of Dupont Circle in Washington, DC, is the flagship restaurant of chef Peter Chang. The menu focuses on Sichuanese and regional Chinese cuisine, backed by modern cocktails and desserts. The restaurant earned a Michelin recommendation, a nod to the precision and character of the cooking.
Chef Peter Chang, born in Wuhan and trained in classical Chinese cooking in Chengdu, has spent decades building a devoted following. His wife Lisa, a pastry chef, created the viral bubble pancake that helped put their restaurants on the map. Their daughter Lydia now oversees operations, ensuring the family legacy continues.
The kitchen is led by executive chef Liz Grisaitis and chef de cuisine Matteo Capon, with pastry chef Angie Walsh in charge of desserts. Pichet Ong, a veteran of Chez Panisse and Spice Market, is a business partner and pastry consultant.
The main menu features Peter Chang’s signature dishes: dry-fry cauliflower, seafood, mala-flavored preparations, and Wuhan sesame noodles. Desserts take an Asian-inspired turn, reflecting Ong’s expertise.
Chang Chang serves lunch and dinner daily. Weekend dim sum brunch draws crowds for handmade dumplings and small plates; the 75-minute time limit reflects its popularity. A happy hour at the bar and patio offers discounted drinks and bites.
