A Tent for Gathering

Das means "tent" in Amharic, and that spirit of welcome shapes every meal here. Owner Sileshi Alifom opened the Georgetown restaurant in 2011 with his wife, Elizabeth Wossen, after a long career in hotel management with Marriott. Born in Addis Ababa and raised in the United States, Alifom brought a refined yet deeply authentic vision to Ethiopian cuisine in Washington. The white-tablecloth dining room, the aroma of berbere and spiced butter, the attentive service — all of it reflects his belief that food is a way to bring people together. "While they’re eating, they’re all eating from the same plate," he has said. That philosophy, paired with consistent quality, earned Das a Michelin Recommended distinction in 2026.

The Menu

The menu at Das is built on time-honored recipes. Doro Wat — tender chicken simmered in red pepper sauce and spices, served with a hard-boiled egg — is a signature. The Veggie Sampler offers generous portions of all the vegetarian entrees, while the Meat & Veggie Sampler combines Chicken Doro Wat, Beef Kaey Wat, Beef Alicha, and beef cubes. Lamb Tibs features tender lamb sautéed in a house blend of spices and Ethiopian spiced butter. Shrimp Tibs adds a coastal note, with shrimp sautéed with onions, red pepper, and fresh garlic sauce. All dishes are served on injera, the fermented flatbread that is both plate and utensil. The food is meant to be shared, conversation flowing as easily as the wine.

A Place for All

Das has drawn a remarkable cross-section of guests — from Dave Chappelle and Stevie Wonder to Prime Minister Ali Lamine Zeine of Niger, and chefs Marcus Samuelsson and José Andrés. Samuelsson featured Das on his PBS series No Passport Required, exploring Ethiopian culinary traditions and Alifom’s immigrant story. Alifom has also served as a guest judge on Food Network’s Beat Bobby Flay. Yet the restaurant remains rooted in its Georgetown neighborhood, offering lunch and dinner Thursday through Sunday, and dinner Tuesday and Wednesday. Whether you are new to Ethiopian cuisine or a lifelong fan, Das offers an elegant, warm introduction to the rich flavors of Ethiopia.
