On Capitol Hill, Pascual is a wood-fired Mexican bistro from The Popal Group, the Afghan family-run hospitality group behind acclaimed D.C. concepts like Lapis, Lutèce, and Maison. Named for San Pasqual, the patron saint of cooks and kitchens, the restaurant is a celebration of fire, flavor, and heritage.

Chef Isabel Coss, who brings deep ties to Mexico City and decades of culinary experience, leads the kitchen. Alongside Chef Matt Conroy, she crafts dishes that let Mexico speak on the plate. The menu changes frequently, but recent offerings include Lamb Tartare Tostada with smoked almond and labneh, Aguachile with bluefin tuna and rhubarb, and Roasted Duck with strawberry tepache. The kitchen’s wood-fired hearth is the heart of the operation, and the bar honors the same values with small-batch mezcales and local spirits.

Since opening in February 2024, Pascual has earned rapid recognition. It was named one of Eater’s Best New Restaurants in America and has been added to the Michelin Guide, which calls it a standout in its class. The restaurant was also honored as one of North America’s 50 Best Restaurants by The World’s 50 Best, earning the No. 42 spot.

Dinner service runs Wednesday through Sunday, with a Sunday brunch from 11:00 to 2:00. A 20% service charge is added to every check to supplement wages and benefits for hourly staff.
