The story
At the intersection of butcher shop and fine dining, Palm Beach Meats on South Dixie Highway is a destination for those who care deeply about what’s on their plate. The team’s commitment to sourcing top-tier artisan products—from responsibly raised meats to dock-fresh seafood and local farm produce—drives everything they do. That philosophy earned the West Palm Beach outpost a Michelin Bib Gourmand in 2026, a nod to good quality, good value cooking that doesn’t compromise on craft.
South Florida native Matthew Candelaria brings over twenty years of experience to the kitchen. Before taking the helm here, he was Chef de Cuisine at the acclaimed Oceano Kitchen in Lantana. His style is unpretentious yet meticulous: New American cuisine rooted in classical French technique, brightened with Caribbean, Spanish, and Italian influences. Everything starts with the ingredient. Candelaria has worked alongside Michelin-starred and James Beard Award-winning chefs, and at Palm Beach Meats he channels that experience into ever-changing menus and exclusive tasting events.
Beyond the shop counter, Palm Beach Meats hosts regular dinners and pop-ups that showcase its farm-to-table ethos. Sunday Supper Series events bring in chefs like Daniel Ramos of Red Splendor Farm for authentic local dinners. Wine and cheese classes, led by La Femme du Fromage’s Tonda, turn an evening into an education. And the Chef Tasting Dinners—curated by Candelaria himself—offer a chance to experience his vibrant, inventive American cuisine in an intimate setting. It’s the kind of place where the quality of the meat and the warmth of the welcome are equally serious.
