The story
Since 2017, Nén Danang has been a quiet force in modern Vietnamese fine dining. Founded by chef Summer Le and experience designer Leon Le, the restaurant operates on a simple conviction: that the truest expression of Vietnamese cuisine comes from ingredients grown within the country’s own borders. To that end, 99% of everything on the plate is hyper-local, sourced from small farms and Nén’s own agricultural research center, Nén Farm.
The result is not a parade of familiar dishes but something more reflective. Each meal is built around a Sto:ry Menu – a tasting sequence that unfolds like a narrative. The current menu, TIME, explores how a Vietnamese perspective shapes the experience of time: slowly, quickly, quietly, intensely. Every course is a deliberate brushstroke, rooted in the textures and aromas of Vietnam’s rivers, mountains, sea, and sky.
This commitment to place and story earned Nén Danang the MICHELIN Green Star in 2025 – the first in Vietnam – and a place in the MICHELIN Recommended list for 2026. The recognition underscores what the team has long practiced: sustainability not as a marketing term, but as a daily discipline of sourcing, cooking, and hospitality.
Chef Summer Le brings a decade of food-writing and advocacy to the kitchen. Her approach is unorthodox yet respectful, innovating long-established culinary traditions without losing their soul. Beverage director Le Hung, a dual-certified sake and wine sommelier, curates pairings that match the menu’s emotional depth, while Leon Le shapes the overall experience – from the moment guests walk into the calm, green-canopied space to the final taste.
