The story
A Bản Mountain Dew’s motto – “bringing the faraway mountain villages into the heart of the city” – sets the tone for this Hanoi restaurant. Chef Việt, working in a modern kitchen, draws on recipes passed down through generations. The ingredients are sourced across northern Vietnam, and the cooking reflects the traditions of four ethnic groups: Thai, Muong, Tay, and Mong.
The interior is designed to evoke the highlands, with generous open space punctuated by partitions of wood, plants, wool, and woven textiles. The result is a setting that feels both communal and intimate, where diners can absorb the colours and atmosphere of the region’s cultures while enjoying a meal.
The Vietnamese menu changes with the seasons, highlighting rare ingredients. Standout dishes include Gà H’Mong hấp muối thảo mộc (H’Mong chicken steamed with herbs), Cá lăng om rượu nếp cẩm (catfish braised in black sticky rice wine at the table), and Xôi ngũ sắc (five-colour sticky rice). Seasonal offerings such as canh rêu (stone moss soup, available late spring to early summer) and chả ốc gác bếp (snails raised in the kitchen’s attic, fed egg whites) are fleeting specialties that showcase the kitchen’s dedication to authentic, time-honoured methods.
In 2026, A Bản Mountain Dew was awarded a Michelin Recommended distinction, a nod to its unwavering commitment to the culinary heritage of Vietnam’s ethnic minorities. It is a place where the flavours of the northern mountains are served with pride, right in the heart of Hanoi.
