Chapter Dining occupies a quiet spot on Chan Cam Street in Hanoi’s Old Quarter. The kitchen explores the culinary heritage of Vietnam’s northern mountainous regions, translating indigenous ingredients and traditional techniques into a modern fine-dining experience. The restaurant earned a Michelin Recommended distinction in 2026, a recognition of its focused vision and execution.
Chapter draws its inspiration from the cooking traditions of northern Vietnam. Indigenous ingredients and time-honored techniques are reinterpreted through a modern lens, resulting in a refined expression of Vietnamese cuisine that feels both rooted and fresh.
The kitchen works exclusively with seasonal, locally grown products. This commitment to terroir extends to waste mitigation practices and community support—Chapter partners with children’s funds to provide food and education in the mountain regions that inspire its menu. The restaurant offers only a tasting menu, no à la carte, allowing the kitchen to focus on the best of each season.
Chef Quang Dung leads the culinary team. His approach emphasizes simplicity and authenticity, letting the quality of the ingredients speak. Sustainability is a guiding principle, from sourcing to plating.
The current Winter–Spring menu is called “Hearth,” named after the central fireplace of a northern stilt house. It unfolds over ten courses, each highlighting ingredients available only during this season. The meal is a narrative of warmth and fulfillment, inspired by the image of a lit hearth and the crackle of firewood. The dining room itself evokes that same warmth, creating an atmosphere of quiet comfort.
