Chef and Philosophy

Chef T.H. Trung, born in Ho Chi Minh City and trained in Paris, founded Lamai Garden to bring his own perspective on Vietnamese gastronomy. He aims to inspire Vietnamese cooks to use local products. The kitchen follows a philosophy of simplicity: sourcing the best ingredients, following the seasons, and making things straightforward. The result is a "new classic" approach to Vietnamese cuisine, where farm-to-table principles guide the menu—from free-range animals to freshly caught seafood. The restaurant’s concept is built on three pillars: farm-to-table, seasonal, and simple cooking.

Seasonal Tasting Menus

The menu changes with the seasons, reflecting the natural rhythm of ingredients. A tasting menu (1,800,000 VND++) is available for dinner, while a lunch menu (1,400,000 VND++) offers a similar experience. A vegan menu is also available. Typical dishes include snails with coconut, winter vegetables, fish of the day, moray eels with cabbage, and a squid noodle dish called phở chua. For mains, guests choose between mountain goat or pigeon, served with rice. Desserts like winter oranges and ginger molasses ice cream round out the meal. Wine and juice pairings are offered to complement the experience.
