A French-Vietnamese Vision in Hanoi’s Old Quarter

At the corner of Cửa Đông and Hàng Gà streets, a charming French colonial house built in the 1920s now holds Maison 1929. Chef and Founder Vincent Cao Minh Page, a French-Vietnamese Parisian who trained at the Jean Drouant–Mederic Hospitality School, opened this restaurant in June 2023. It is his second venture in Hanoi, following the success of his first restaurant, Chào Bạn. The two-story space is warm and intimate, with wooden accents, silk, brick, and ceramic details, and artwork celebrating Vietnamese culture.

A Culinary Tour of Vietnam

Maison 1929’s menu is a journey through Vietnam’s three regions. From the North, you’ll find Nem Hanoi-style spring rolls, caramelized fish in a clay pot, and green papaya salad. Central Vietnam contributes sautéed egg noodles with seafood, while the South offers pork in caramel sauce and bún bò Nam Bộ (Southern-style beef noodle soup). Chef Vincent also adds his own signature dishes, such as charcoal-grilled sturgeon and grilled fish cake with local herbs. The menu extends to modern Vietnamese creations and a 7-course Michelin Selected Tasting Menu, which pairs each course with wine.

The restaurant’s dedication to authentic, high-quality Vietnamese cuisine earned it a place in the Michelin Guide’s “Michelin Selected” category for both 2024 and 2025. This recognition, awarded for outstanding food quality, balanced flavors, and consistency, has made Maison 1929 a destination for local Hanoians and international visitors alike. It has also become a choice for politicians and heads of state visiting Hanoi.

Chef Vincent’s own story is woven into the food. Born in Paris to a French father and a Vietnamese mother, he was introduced to the flavors of Vietnam through his family. A formative internship at a Vietnamese restaurant on Montmartre Hill, where he was captivated by a dish of coconut-braised prawns, solidified his path. After working in five-star hotels in Hanoi and running his own crêperie in Ho Chi Minh City, he returned to Hanoi to open Maison 1929, fulfilling his vision of sharing Vietnamese cuisine with the world.
