The story
Since opening in 2018, T.U.N.G dining has brought a fresh perspective to Hanoi’s culinary scene. Located a few steps from St. Joseph’s Cathedral and Hoan Kiem Lake, this small, cozy restaurant is the vision of Head Chef Hoang Tung. The name itself—an acronym for Twisted, Unique, Natural, Gastronomique—captures the philosophy behind every plate.
Chef Hoang Tung, named to the Forbes Vietnam Under 30 Class of 2022, leads a kitchen that prioritizes the authentic flavour and healthiness of produce. The team avoids cooking with fat and cream, instead relying on vegetables and healthy techniques to keep the original flavours of the ingredients intact. The result is a cuisine that feels both refined and grounded.
T.U.N.G dining has earned its place in the MICHELIN Guide for 2023, 2024, and 2025, and was featured in Asia’s 100 Best Restaurants 2021. Chef Tung also had the honour of crafting the opening course for the inaugural MICHELIN Guide Award Ceremony & Gala Dinner in Hanoi in June 2023. This recognition underscores the restaurant’s commitment to excellence and its role in elevating Vietnamese gastronomy.
The current menu, “The Treasure Gallery of Vietnam’s Flavors,” is a storytelling journey through the language of art. Chef Hoang Tung elevates familiar local ingredients—such as ambarella, Hue shrimp paste, garlic stems, and sweet potatoes—into dishes that are both familiar and unexpected. Each course is presented as a living masterpiece, inviting guests to not only eat but to behold, listen, and converse with the flavours of Vietnam.
The restaurant also serves as a platform for local artisans, showcasing fermented juices, specially crafted beers, and organic edible herbs. The atmosphere is warm and welcoming, breaking through the limits of traditional fine dining to offer an experience that is both extraordinary and genuinely friendly.
