This is the creation of Chef Thierry Mounon and his wife, Tina Trang Pham—a restaurant that feels like their home, which, in a very real sense, it is. Chef Thierry Mounon’s journey to Ho Chi Minh City was shaped by rigorous training in Europe and the South Pacific. He made his debut in the Michelin-star arena in 2003 at the eponymous restaurant of renowned chef Christian Etienne in Avignon. His path then led him to a Michelin-starred establishment in London, before further honing his skills across France and in Bora Bora. When he arrived in Vietnam in 2008, he brought with him a deep respect for classic French technique and a commitment to sourcing exceptional ingredients. In 2010, he opened La Villa with his wife, a venture that would later earn the coveted title of a Michelin-selected restaurant in 2023, a recognition it continues to hold.
The menu at La Villa is a celebration of French cuisine, respecting tradition without being bound by it. Starters might include a delicate Irish crab and caviar Osciètre, or a goose foie gras terrine from Maison Castaing with Sauternes jelly and quince reduction.
