A Chef’s Singular Vision

At Miên Saigon, chef Thuy Dung leads a kitchen defined by absolute quality and fearless innovation. Her approach is inspired—but never confined—by Vietnamese heritage. Each plate reflects a meticulous selection of the world’s finest ingredients, subtly accented by Vietnamese culinary artistry. The result is a contemporary dining experience that earned the restaurant a place in the Michelin guide.

The Space

The dining room is inspired by Vietnam’s traditional three-compartment homes. Sheer curtains softly divide the 22-seat open layout into three intimate zones, with no private rooms—so every guest has an unobstructed view of the chef at work. Air conditioning and counter dining add to the refined comfort.

The Tasting Menu

The tasting menu traces the sun’s path across Vietnam and beyond, drawing ingredients at the very height of their flavor. The current menu, titled after the autumn cycle of transformation, opens with Ninh Thuan cantaloupe paired with Jamon Iberico and Mac khen pepper, then moves through Nha Trang tiger prawn with fermented chili, Japanese uni with Ta Nung glutinous white corn and abalone liver sauce, and Nha Trang flower crab with Imperial caviar. Later courses include dry-aged Long An duck with duck jus, Satsuma Wagyu A5 with Nanatsuboshi rice, and a dessert of Ben Tre coconut with Hanoi green rice flake and lychee. An optional alcohol pairing features selections from Germany, Japan, France, the USA, and Hungary.

The menu is priced at 2,950,000++ VND per person, and guests are asked to allow 2.5 hours for the full experience. The restaurant requests at least 24 hours’ notice for any dietary restrictions.

Miên Saigon is open Tuesday through Sunday, from 18:00 to 23:00.
