The story
At Nephele in Ho Chi Minh City’s Binh Thanh district, Chef Francis Thuan Tran crafts a dining experience rooted in place. The kitchen draws on Vietnam’s unique terroir, letting the seasons dictate what arrives on the plate. Ingredients are treated with precision—deconstructed and reimagined into an Asian contemporary cuisine that feels both familiar and surprising.
The sole offering is a tasting menu, priced at 3,200,000 VND++ per person. Vegan and vegetarian options are available with advance notice, and guests can opt for a wine pairing or a non-alcoholic alternative. The restaurant requests at least 48 hours’ notice for dietary restrictions, and a deposit secures each reservation.
The recognition from the Michelin guide reflects the care evident in every detail—from the sourcing of ingredients to the quiet confidence of the service. The space, open Monday through Saturday from 6 PM to 11 PM, is air-conditioned and suited for an evening that unfolds at its own pace.
Nephele is a place where Vietnam’s land and seasons are the true authors of the menu, and the kitchen is their translator.
