The restaurant’s philosophy is straightforward: use 100% fresh seafood delivered daily and pair each dish with a specific dipping sauce crafted in-house. These sauces are the soul of the meal—a balance of salty, sweet, sour, and spicy, often bright with calamansi, lemongrass, and chili. Each shellfish variety gets its own perfect accompaniment, from a tangy ginger fish sauce to a fiery green chili salt.
