Since opening in 2018, this dining destination has made its name through wood-fired cooking that infuses every dish with bold yet refined flavours. The philosophy is straightforward: simplicity elevated, with great ingredients and warm hospitality at the core.
Executive Chef Julien Perraudin, a Burgundy native with three decades of experience across Europe, Australia, and Asia, leads the kitchen. His cooking is described as simple yet expressive, blending heritage with innovation. Head Chef Huy, a fixture at Quince since the beginning, brings precision and deep ingredient knowledge to the wood-fired grill. Together, they craft a Mediterranean menu shaped by a world of flavours — from the bold tastes of Asia to classic French techniques.
The wine list is a serious affair, featuring Champagne grower-producers like Billecart-Salmon and Krug, alongside Burgundies from Domaine des Comtes Lafon and Joseph Faiveley, and a strong selection of Rieslings and Sauvignon Blancs. The restaurant's commitment to seasonality and produce-driven fare is evident throughout.
Michelin recognised Quince with a Recommended award in 2026, cementing its place as a leader in Vietnam's modern dining scene. The atmosphere is one of refined warmth — a place where wood smoke, great wine, and thoughtful cooking come together.
