The structure once served an industrial purpose for nearly a century before sitting abandoned for twenty-five years. Today the vast hall preserves its original architectural lines while providing a bright backdrop for daily service. Partner Sahondra Verdan oversees a front of house that balances professionalism with genuine warmth.

Chef Jean-Sébastien Ribette anchors the menu with a strict focus on local produce and precise technique. His approach favors clean preparation over heavy sauces, allowing seasonal ingredients to dictate the final plate within this refined cuisine.
