Centauro: Cooking by Asking Questions

On Avenida Perú in Mendoza, a young team runs Centauro, a restaurant built on a simple but radical method: every dish starts with a question. Sometimes absurd, sometimes uncomfortable, the question always leads somewhere the kitchen would not have reached without it. The result is contemporary cuisine that explores the products of Argentina with a clear point of view.

Under the direction of chef Aris Pabon, Centauro's "Lab Gastronómico" works with a cellar of 110 labels and a commitment to local identity that goes far deeper than the plate. The restaurant has earned a Michelin mention, a recognition that fits naturally with the precision and curiosity at work here.

From the Precordillera to the Table

The experience at Centauro is not limited to what is on the plate. The tableware itself is made by local potter Agustín Herrera, who works clay from Potrerillos, in the Mendoza precordillera. Each piece is unique, with textured glazes and colors that blur the line between utility and art. "We propose a new way of making tableware," Herrera says, creating objects that respond to the restaurant's concept rather than anything off the shelf.

That same sourcing philosophy drives the kitchen. Centauro works with Quipu, a small farm in Uspallata that grows 14 varieties of Andean potatoes at 2,000 meters above sea level. These tubers, with their high dry matter content and creamy texture, appear in multiple preparations alongside a single dish: a matured rib eye with a potato and goat cheese alligot. "We respect the structure of each potato," says executive chef Diego Tapia, using different cooking methods for each variety.

Reinterpreting Mendoza

"Reinterpretar Mendoza," the restaurant says, means exploring its territories without leaving the city. Centauro's contemporary cuisine is a constant conversation between the land and the table, where a single ingredient—a potato, a piece of clay, a cut of beef—can tell the story of an entire region.
