The story
In 2013, Ana Lovaglio—daughter of pioneering winemaker Susana Balbo—opened Osadía de Crear, the restaurant at Susana Balbo Wines. The name translates to “daring to create,” and it captures the family’s entrepreneurial spirit. The restaurant was conceived as a way to offer a unique, innovative wine tourism experience in the heart of Mendoza.
Osadía de Crear’s menu is defined by seasonal ingredients and contemporary culinary techniques. The kitchen crafts multi-course tasting menus, each thoughtfully paired with a selection of the estate’s finest wines, produced by Susana Balbo—Argentina’s first female oenologist—and her team. The cuisine is contemporary in style, rooted in the purity of Mendoza’s climate. Diners can enjoy their meal in the comfort of open galleries or amid the expansive gardens of the winery, making the most of the region’s clear skies and mountain light.

Alongside Osadía de Crear, the property also offers Crios, a more casual gastronomic proposal. Crios serves seasonal cuisine with local identity, blending fresh ingredients and traditional Argentine techniques with a contemporary perspective. Guests can choose between the Menú de Fuegos—a journey through Argentine cooking with grilled meats and sides—or the Picnic entre viñedos, a relaxed option featuring a light starter, fresh dishes like sandwiches or salads, and a sweet finish under the Mendoza sky. Both experiences further showcase the estate’s commitment to place-driven, modern dining.
