The story
Located at 1 Macquarie Street, Aria brings a refined take on seasonal Australian cuisine to Sydney’s Circular Quay waterfront. The restaurant opened in 1999 under owners Matt Moran and Bruce Solomon, establishing a long-standing presence on the harbour. Executive Chef Tom Gorringe now leads the kitchen, working closely with Moran to anchor every dish in provenance while tracing ingredients directly to local growers and fishermen.
