The story

Restaurant Himmelreich Absdorf: Seasonal Austrian Cuisine at Wagram

The Chef and Regional Roots

At Restaurant Himmelreich in Absdorf, Marco Gangl directs a puristic kitchen dedicated to seasonal Austrian cuisine. Originally from Styria, Gangl refined his technique at establishments including Landhaus Bacher, Bründlmayer, and Frantzen in Stockholm. Supported by sous-chef Marcel Herndl, the team applies these influences to emphasize regional products and precise preparation. Every element serves the integrity of the ingredient, establishing a cooking style rooted in quality and restraint.

Innovative Compositions and Menus

The Gault&Millau guide praises the surprising six-course menu, noting compositions that linger long after the meal concludes. Standout creations span vegetable-focused arrangements and protein dishes alike. Guests encounter combinations like kiwi, leek, and salad, followed by peas with morels, mushrooms, and a coffee jus. Fish courses feature char with horseradish and radish, alongside zander prepared with kimchi and muskatkürbis. Milk veal appears with asparagus and saffron, while desserts offer bitter salads enriched with hibiscus and vanilla. Portions remain substantial, balancing innovation with clear satisfaction.

Intimate Space and Garden Setting

Just six tables define the dining room, where a reduced-elegant interior connects to a magical garden set within the Streckhof. Located next to Weingut Josef Fritz, the venue benefits from a strong sense of place in the Wagram region. The thirteen-moment surprise menu costs 135 euros, with wine pairings available at 65 euros. Reservations are mandatory due to the small footprint and elaborate service structure. Essential components like onions, celery, and mushrooms form the base of sauces and stocks, underscoring the kitchen's commitment to traditional foundations even within this modern regional cuisine.

The restaurant name truly lives up to its promise – whether you dine in the enchanting garden or the understatedly elegant interior. The culinary evolution over the past few years has been highly impressive. It features a surprising six-course menu that is intentionally very seasonal. What Marco Gangl and Marcel Herndl deliver in this spirit (featuring abundant vegetables) through innovative dishes and aromatic finesse creates a composition that lingers in the memory. This is also thanks to the well-proportioned servings. Whether it’s the combination of kiwi, leek, and salad, or the pairing of peas, morels, and mushrooms with a coffee jus; whether it’s char with horseradish and radishes, or veal with asparagus and saffron, a countryside outing around the Wagram is absolutely recommended. Minor critique: five hours at the table is simply too long, even for an excellent menu.
