The story

Fuggerstube in Alpbach: Regional Austrian Fine Dining by Hansi Treichl

Seasonal rhythms in the kitchen

Fuggerstube in Alpbach anchors its Austrian cooking in the immediate Alpine surroundings under Chef Hansi Treichl. His kitchen crew sources ingredients directly from local producers and the estate gardens to match the turning seasons. The menu avoids heavy tradition for a lighter interpretation that still honors regional staples. Every plate builds around texture contrasts and clear ingredient profiles rather than complex sauces.

Plates built on texture and balance

A Gault & Millau rating of fifteen points highlights how Treichl structures his seasonal Austrian plates around deliberate contrasts. The opening course pairs rich Wagyu tartare with smoked belly bacon, aromatic mustard ice, and roasted root vegetables. Guests often return for the potato dumpling filled with tomato ragout and resting on a light tomato foam. The meal typically concludes with tender zander fillet alongside smoked cauliflower cream and crispy baked florets.

The historic room and finishing touches

The restaurant occupies a historically named hall that frames the dining experience with quiet warmth. A final touch involves shaving Berggranat cheese from the Zillertal mountain dairy directly over dessert plates at the table. Pairs well with an extensive selection of non-alcoholic Feral beverages crafted in South Tyrol. The space remains comfortable for extended dinners while keeping the focus squarely on the food.

The historic Fuggerstube at the Alpbacher Böglerhof is the perfect place for connoisseurs and impressive taste moments under the direction of Hansi Treichl. The menu opener is a real statement: powerful Wagyu tartare meets smoky belly bacon, accompanied by aromatic mustard ice and fine root vegetables. Our personal highlight is the potato dumpling, filled with spicy tomato ragout, served on a light tomato foam. The famous finishing touch: table-shaved Berggranat cheese from the Zillertal mountain dairy. Soul food at its finest. The main course impresses with a tenderly cooked zander fillet, accompanied by cauliflower – once as a smoked cream, once baked until crispy. Particularly noteworthy: the non-alcoholic Feral drinks from South Tyrol.
