The story

Zum Fröhlichen Arbeiter in Apetlon: Award-Winning Austrian Cuisine in Burgenland

The kitchen and seasonal direction

Chef Hannes Tschida guides the kitchen at Zum Fröhlichen Arbeiter in Apetlon, where contemporary Austrian cuisine meets the quiet rhythm of the Seewinkel region. He earned the Wirt des Jahres title in 2022 and currently holds a 12.5 score from Gault&Millau by treating the venue as both a neighborhood gasthaus and a precise culinary studio. The menu follows local harvest cycles, introducing wild garlic into tasting formats once spring temperatures arrive. Pâtissier Madeleine Holzhammer crafts the first impressions, including a pale goat cheese panna cotta that cuts through richness with bright acidity.

Plates and refined techniques

Savory courses rely on careful temperature control and contrasting textures. Glazed calf sweetbread arrives with a clean exterior, while beef cheeks rest alongside crisp fried herb parcels. A red mullet fillet demonstrates how delicate fish carries heavy accompaniments, settling on neutral polenta beneath a concentrated saffron reduction. These preparations reflect a distinct Burgenland cooking style that respects traditional ingredients while applying exacting plating standards.

The cellar and dining room

Guests navigate a space that functions simultaneously as a wine bar and a formal dining room. The basement holds roughly eight hundred labels, prioritizing domestic vineyards from Burgenland and neighboring districts. Staff members match these selections to the heavier meat dishes and lighter vegetable preparations alike. Wooden furnishings and straightforward sightlines keep the focus on conversation and the passing courses. This balance between casual hospitality and structured service defines what makes the location consistently notable.

This restaurant can be many things: a village inn, a gourmet restaurant, a wine bar, but above all, a place for enjoyment – and that's exactly what we want. An incredibly light goat cheese panna cotta, followed by glazed veal sweetbread, makes for a successful start. Unfortunately, the consistency of the redfish fillet does not convince us: it is neither crispy nor translucent. Furthermore, the neutral polenta is pushed into the background by the dominant saffron sauce. Perfectly executed, however, are the beef knuckles with fried herb dumplings. The sensational wine list is also worth mentioning.
