With the exception of a few days during the high season when a dishwasher assists, the rule here is: Stefan Haas works alone. Not quite. He handles the kitchen while his wife, Juliane, manages service – but that’s the entire team. The couple truly runs the place together, and the number two even runs through their exceptionally well-executed menu: pickled trout with rhubarb, Styrian freshwater shrimp with rice koji, venison liver mousse with cherries, or veal sweetbread braised in garum – each purist dish consistently relies on two perfectly harmonizing flavor components. For the main courses – wels catfish with curry sauce and fermented apricot ice, as well as pigeon with hummus and watermelon – there may be three components, while the delightful “lemon dessert” features just one.
