The story

Wassermann Fine Dining in Bad Aussee | Award-Winning Austrian Cuisine

The kitchen and its focus

Chef Johannes Ganisl directs daily operations at Wassermann in Bad Aussee, anchoring the menu around precise Austrian cuisine centered on lake fish. His culinary philosophy embraces purist techniques while highlighting noble fish creations sourced entirely from regional waters. Diners typically start with an Ausseerland trout mosaic layered with Grüll caviar, then transition to broad beans balanced against a Styrian mountain shrimp. The kitchen treats local catch as both primary ingredient and structural foundation for every plate.

Signature preparations and technique

The most distinctive course arrives initially whole on a compact bed of dried grass, releasing subtle smoke notes before the table receives the cut. This saibling presentation shifts seamlessly into a composed arrangement featuring tender broccoli florets and a velvety potato mousseline finished with a toasted hay reduction. Sweet conclusions maintain the same disciplined approach, pairing creamy peanut ice cream with ripe banana segments and lightly popped corn kernels. Each element follows a clear trajectory from raw material to refined finish.

The dining room and cellar

Situated high above the lake, the interior frames uninterrupted sightlines toward the Dachstein peaks while maintaining an intimate scale for conversation. The restaurant secured fifteen points from Gault & Millau, which noted the view and the precise handling of regional ingredients as defining features of contemporary Austrian cuisine. The beverage program complements this restraint through a tightly edited wine list and structured alcohol-free pairing routes designed for complete sensory alignment. Service flows steadily under the direction of the floor manager and lead sommelier, matching glass rotations precisely to the kitchen’s pacing.

Even just the location high above Lake Grundl is breathtaking. What Johannes Ganisl puts on the plates is equally stunning as the view. Fish lovers experience fine dining at the highest level here, full of creativity. The evening opens with a mosaic of Ausseerland trout with Grüll caviar. That fava beans harmonize perfectly with a Styrian mountain shrimp is proven by the next course. Almost an experience in itself: "Char & Hay". Here, the fish is first presented whole on a bed of hay, before blending with broccoli, potato mousseline, and hay sauce into a sensational tasting experience. The finale is also a success: peanut ice cream with bananas and popcorn. The wine expertise of the highly attentive service is impressive, and their passion for it is palpable.
